There are lovely places that are focusing on sourcing seasonal ingredients, farm to table etc
that sounds nice. the kind of place that tells you the name of the chicken ur eating and his favourite activities
When it comes to international cuisine, at least where I live, there is no shortage of chefs from around the world, so authenticity is not actually lacking either
